Qingdao IPA Beer: A Taste of China in Japan

The hot pot is already going. Someone has topped up the broth, the lamb is in, and the table is loud in the way that only a table full of people who have not seen each other in months can be. In Ikebukuro or Yokohama or wherever your people have gathered tonight, that scene is entirely possible — and the beer on the table does not have to be a compromise. Tsingtao’s modern answer to a new generation

Tsingtao Brewery was founded in 1903 in Qingdao, Shandong — established by German and British investors who brought European lager-brewing methods to the Shandong coast. The brewery has been operating continuously since, making it one of the oldest in China and one of the most recognised Chinese beer brands internationally.

The IPA is a different proposition from the classic Tsingtao lager. Launched in the 2010s as Tsingtao’s response to younger urban Chinese drinkers seeking more flavour, it is brewed in the American-style IPA format: deeper gold in the glass, a bright citrus-forward hop aroma, a fuller body, and a bitterness that is present but not aggressive. At 6.2% ABV, it carries more weight than a session lager without tipping into difficult territory.

This is Tsingtao moving deliberately — applying over a century of brewing history to a format that its core audience was already reaching for. The result is a beer with genuine hop character that still reads as familiar to anyone who grew up with the brand.

How Qingdao IPA Beer is drunk at home

Gānbēi (乾杯) (gan-BAY) — Mandarin for “dry the cup.” The instruction is literal: you drink it all, in one go, and you do it together. At a business dinner it carries real social weight, a measure of sincerity and respect exchanged across the table. Among friends it is faster and louder, and the glass refills immediately.

Hot pot — huǒguō — is the natural home for this beer. The communal pot at the centre of the table, the selection of meats and vegetables going in and coming out, the dipping sauces assembled to each person’s specification: it is a meal designed for exactly this kind of drinking. The IPA’s citrus hop note cuts through the richness of the broth cleanly.

Jiǎozi — dumplings — are the Spring Festival food, made in batches with family the night before the new year, eaten in quantity. The fuller body of the IPA holds up to pork and cabbage filling without disappearing into it. And at a formal dinner, Peking duck — sliced thin, wrapped in pancakes with hoisin and scallion — finds an easy partner in the beer’s brightness. Spring Festival and the business dinner table are the two occasions where this beer does its most important work.

How to drink it in Japan

The IPA format rewards temperature control, so give it time in the fridge before serving — fifteen to twenty minutes colder than you would a standard lager. Pair it with a 7-Eleven nikuman on a cold evening: the steamed pork bun and the citrus hop aroma work in the same direction that jiǎozi and IPA do at home.

For a proper pairing, try it alongside karaage at an izakaya — specifically the version with lemon squeezed over it. The acidity of the lemon and the citrus-forward hops reinforce each other, and the fried chicken provides enough weight to match the 6.2% ABV. It is a combination that lands better than it has any right to.

Winter and early spring are the seasons where this beer makes the most sense in Japan — a case on the table at a Spring Festival gathering in February, when the occasion calls for something with more presence than a standard lager.
